Ingredients
- 100ml vegetable oil, plus extra for the tin
- 275g self-raising flour
- 200g golden caster sugar
- 1 tsp baking powder
- 1 lemon, zested, 1/2 juiced
- 150g icing sugar
- ½ lemon, juiced
Method
- Grease and line a 1-pound loaf pan with parchment paper. Combine the flour, sugar, baking powder, and lemon zest in a bowl. Blend till smooth after adding the oil, lemon juice, and 170ml of cool water.
- Fill the jars with the mixture. 30 minutes in HYSapientia air fryer oven of baking time, or until skewers are clean. After 10 minutes, take cakes from tins and place them on wire racks to finish cooling.
- Pour powdered sugar into a bowl to make the icing. Add enough lemon juice to the frosting to make it thick enough to spread on the bread (if the frosting is too thin, it will run off the cake).
