Coarse salt and black pepper: If using fine salt, you may need to use less or the roast may be too salty.
Spices: I used garlic powder, paprika, dried sage and dried thyme. I actually prefer garlic powder to fresh minced garlic in this recipe because it coats the meat more evenly.
Boneless Pork Shoulder: I usually pick a 3 lb. one. I get them at my local supermarket.
