Parmesan Basket with Pumpkin Cream
This is a quick and delicious recipe that's perfect as a winter appetizer.

75g parmesan cheese, 5g flour, 150g pumpkin, 25ml vegetable stock, 1 shallot, salt and pepper to taste, EVO oil to taste.
The squash is peeled, seeded, and diced. Brown the chopped shallots with extra virgin olive oil. Add the sliced pumpkin. Cook for a few minutes, add just-covered broth and simmer over medium heat for 20 minutes. Stir every now and then. When the mixture is cooked, stir until you have a smooth and dense compost. Add a pinch of salt and pepper. Meanwhile, make some squares with oven paper and spread the parmesan cheese mixed with the flour. Create an 8-10cm circle and melt in a 180° oven. Place the parmesan cheese on the round mold, let it shape and cool.
